Grilled peppers and anchovies rolls
The sweet taste of grilled peppers in contrast with the strong flavors of anchovy and garlic parsley dressing make these rolls truly delicious. If you wish, you can also add a few drops of tabasco. Serve the rolls as an appetizer with toast or fresh bread.

Yield: 4 Persons

Ingredients:
  • 2 bell peppers
  • parsley
  • 1 clove of garlic
  • 1 table spoon pine nuts
  • fresh chilli pepper (optional)
  • 12 anchovy fillets
  • olive oil
Instructions:
Grill the peppers in the oven until they are well cooked (about 45 min. 180 degrees).<br /> Meanwhile, chop the garlic, pine nuts and parsley and pour into a bowl.<br /> Season with a little olive oil and, if you like, add a little bit of chilli.<br /> When cooked, put the peppers while still hot in a plastic bag for food for about 20 minutes. This will help you remove the skin later.<br /> Strip the peppers, open them up and remove the seeds.<br /> Cut the peppers into stripes and arrange it on a chopping board.<br /> Put an anchovy fillet on each pepper stripe and make rolls.<br /> Season with the mixture you made earlier and place on a serving dish.<br /> NOTE: Season the rolls on a separate plate, this will prevent excess oil to remain on the bottom of the dish you will serve.
